It’s a refreshing and savory fusion that’s quick to prepare and perfect for impressing your guests or savoring as a special treat.
Ingredients
1 lb shrimp, raw, peeled and deveined
2 tablespoons shrimp seasoning blend
1 ripe honeydew melon
1 cup raw walnuts
2 tablespoons coconut oil
For the sauce:
1/4 cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon yellow mustard
2 tablespoons honey
1 tablespoon apple cider vinegar or white wine vinegar
Salt to taste
Instructions
For the sauce:
In a small mixing bowl, add all of the ingredients and set aside.
Toast the walnuts by placing them in a dry skillet.
Heat to medium heat and cook until fragrant and toasted a light brown. Keep an eye on it so they don’t burn!
Remove from skillet and set aside.
Scoop the melon using a round tablespoon, spoon, or a melon baller. Set aside.
Pat dry the shrimp.
Add the shrimp seasoning to the shrimp.
In a wok, add the coconut oil.
Add the shrimp and cook until just pink.
Add the melon.
Add the walnuts.
Add the sauce.
Combine all of the ingredients until they are mixed.
Notes
If you don’t have any shrimp seasoning blend, you can use any seafood seasoning, such as Old Bay.
