Espresso Chocolate Mousse

Ingredients

  • 6 oz silken tofu
  • 2 oz melted dark chocolate (at least 70% cacao)* see notes
  • 2 tablespoons maple syrup
  • 2 oz Espresso
  • 1/4 teaspoon cinnamon
  • 2 tablespoons pomegranate seeds


Instructions

  1. To melt the chocolate, you can add the chocolate to a double boiler and stir until melted.
  2. Add all of the ingredients to a blender and blend until smooth.
  3. This makes two servings, so divide into two bowls.
  4. Refrigerate for 30 minutes.
  5. Top with pomegranate seeds (or any fresh fruit that works great)

Notes

I use Hu No Sugar Added Baking Chips for sugar-free dark chocolate, and they melt perfectly!

To make this recipe candida friendly, use Lakanto brand maple syrup.
