Have you ever had a Sloppy Joe? Classic, comforting and delicious – Sloppy Joes are perfect for a filling meal. And in this case, I’m turning our classic sloppy Joe up a notch with the addition of juicy pineapple and using ground turkey. Trust me; it’s so good! This recipe is quick, easy, and perfect for any weeknight meal that will have you going back for seconds! So get your stretchy pants ready, and let’s get cooking!
Ingredients
1 Extra Virgin Olive Oil
6 slices nitrate free bacon
1 1/2 pounds ground turkey 94% lean
1 sweet onion, chopped
3 cloves garlic, chopped
1 1/2 tablespoons pure maple syrup
3 tablespoons red wine vinegar
1 tablespoon Worcestershire sauce
1 cup tomato sauce
1 cup fresh pineapple, chopped
Salt and ground black pepper
6 Kaiser rolls
1 cup shredded yellow cheddar cheese
Instructions
Place a large skillet over medium-high heat and add EVOO, about 1 tablespoon. Cook bacon in the pan until crispy, about 3-4 minutes, and move to a paper towel to absorb the grease.
Drain the bacon fat add the ground turkey, and cook until no longer pink, about 10 minutes. Add the onion and garlic to the pan and cook until soft, about 5-6 minutes.
While the turkey and onions are cooking, mix the maple syrup, red wine vinegar, Worcestershire, and tomato sauce in a small bowl. Pour into the skillet with the ground turkey and onion, cook for about a minute, then stir in the pineapple.
Crumble the bacon into small pieces and add it back to the skillet. Season with salt and pepper to taste.
Crank up the heat to medium-high and let the sauce simmer until thickened.
Split open the rolls and toast them under the broiler. Be careful not to burn them!
To serve, place a bun bottom on a plate with a scoop of Pineapple Sloppy Joe mixture and a sprinkling of cheese. Top with the bun cap.
Notes
To make this recipe gluten-free use a gluten-free bun.
To make this recipe without a bun, use a lettuce wrap.
To make this recipe with fewer carbohydrates, only use a bottom bun. It will still be delicious!
To make this recipe dairy free, use dairy-free cheddar cheese, or omit the cheese.
