Description
Sesame kelp noodles are a nutrient-packed alternative to regular pasta. These noodles are made from kelp, an edible seaweed packed with minerals like calcium, magnesium, zinc, potassium, and iron. They have a slightly sweet taste and chewy texture that is perfect for Asian stir-fry dishes or salads. The sesame element adds an extra layer of flavor as well as healthy fats that keep you feeling full longer. Plus, the nutrients from the sea vegetables will offer many health benefits such as improved digestion and immune system support!
Ingredients
1 lb chicken breast (cut into bite size pieces)
2 bags Kelp Noodles (rinsed well)
3 cups broccoli
4 carrots (sliced)
2 cups purple cabbage (shredded)
1/3 cup coconut aminos
2 tbsp sesame oil
2 garlic cloves, minced
3 tbsp sesame seeds (toasted)
1 tsp sea salt
Instructions
- Sauce: Combine the coconut amino, toasted sesame oil, garlic and sesame seeds. Whisk together and set aside.
- Rinse the kelp noodles and set aside.
- Add EVOO to a wok if you have one. If not, a large skillet will work fine. Heat to medium heat.
- Add the chicken, broccoli, and carrots and stir fry for about 6 minutes; the chicken will be almost cooked but does not have to be cooked all the way through.
- Add the cabbage and cook for another 2 minutes.
- Add the kelp noodles, salt, and the sauce to the skillet.
- Cook for another 5 minutes, making sure the chicken is cooked through.
- Remove from the heat and let cool and you can give another light drizzle of the sesame oil if desired, and top with toasted sesame seeds.
