There are a lot of different ways to make avocado toast, but this one is my favorite. Avocado toast with hard boiled eggs is easy to make, and the hard boiled eggs give it a nice protein boost. I always keep some avocados in the fridge so I can whip this up when I’m in a hurry. The trick to making the eggs look so fancy you can’t stop looking at it, is using the mandolin, or even a shredder to shred the hard boiled eggs. Serve this at your next breakfast or brunch and you will see what I mean!


Ingredients

I slice of fresh pumpernickel bread, toasted

1/2 ripe avocado, mashed

2 hard boiled eggs, shredded with a mandolin, or mashed with a fork

1/2 tsp everything bagel seasoning
