When I made this recipe for banana crepe cakes for the first time, I was looking for a breakfast that was low on carbs and sweet but also had some protein. The texture is not that like a fluffy pancake, but not as thin as a crepe. So the name ended up somewhere in the middle.

Banana crepes? What is this, a French restaurant? No, it’s just my latest food obsession: Banana Crepe Cakes. I love the taste of bananas, and when I combined them with the thin texture of a crepe, it was pure magic. Now, these aren’t quite like traditional pancakes, but they are definitely worth trying if you want something new and exciting for breakfast. Plus, they are super easy to make with only three ingredients – just follow my simple recipe below!


Ingredients

1 large banana

2 large eggs

1 teaspoon cinnamon powder

1 teaspoon coconut oil


Instructions

In a blender, add 1 banana, eggs and cinnamon.

Blend for about 10 seconds.

Add coconut oil to a griddle or a skillet and heat until the coconut oil is just melted.

Pour the mixture to the griddle.

Flip after about 2-3 minutes and cook another 2-3 minutes.
