Easy meatloaf is a fun way of saying I gave my daughter the task of making meatloaf for dinner without ever showing her to ropes of making meatloaf. The Easy Meatloaf recipe is so easy that the only difficult part was explaining how to get the food processor to work through Facetime. The original title of this was Monica Can Make Meatloaf, and I wrote that down because she impressed me with this recipe the first time she made it. However, it was so easy that she made it several times, and it always came out perfect!
When making meatloaf, it can tend to be dry or lack flavor. So adding some almond milk may sound weird, but it works well!

Ingredients
1 1/2 pounds of ground beef
1 egg
1 small onion, finely chopped (about 1/2 cup )
1 tsp garlic paste from the tube
1 cup unsweetened almond milk
1 cup quick rolled oats
1 tsp salt and pepper
1 tsp pepper
2 tablespoons maple syrup
2 tablespoons yellow mustard
1/3 cup tomato sauce
Instructions
Preheat oven to 350 degrees
Add rolled oats to a food processor and pulse until oats become fine crumbs.
Combine the beef, egg, onion, almond milk, and oat crumbs in a large bowl. Season with salt and pepper to taste and place and form into a loaf and place on a foil line baking sheet.
In a separate small bowl, combine the maple syrup, mustard, and tomato sauce. Mix well and pour over the meatloaf
Bake at 350 degrees for 40 – 50 min temp 165
Broil for 3 mins to brown the top.

Notes
You can substitute ground turkey for ground beef.
To make sure this recipe is gluten-free, use gluten-free rolled oats.
