How can I make this recipe sugar-free?
Some brands of dark chocolate do not have any dairy or added sugar. My favorite sugar-free chocolate chip for this recipe is HU No Sugar Chocolate Chips. This brand uses real dates as a sweetener, which are sweet and melts perfectly!
What if I don’t like coffee or espresso?
No problem! I have made this without the espresso, and it still comes out perfect!
What if I can’t find silken tofu?
Sometimes stores don’t carry the silken tofu. You can use soft tofu, which is the Chinese- style equivalent of silken tofu.
Can I use a food processor instead of a blender?
Yes! Both work great! I make mine using the Vitamix blender. It was pricey but worth the investment, and it has lasted me 6+ years so far!

Ingredients
- 6 oz silken tofu
- 2 oz melted dark chocolate (at least 70% cacao)* see notes
- 2 tablespoons maple syrup
- 2 oz Espresso
- 1/4 teaspoon cinnamon
- 2 tablespoons pomegranate seeds
Instructions
- To melt the chocolate, you can add the chocolate to a double boiler and stir until melted.
- Add all of the ingredients to a blender and blend until smooth.
- This makes two servings, so divide into two bowls.
- Refrigerate for 30 minutes.
- Top with pomegranate seeds (or any fresh fruit that works great)

I use Hu No Sugar Added Baking Chips for sugar-free dark chocolate, and they melt perfectly!
To make this recipe candida friendly, use Lakanto brand maple syrup.
