Ingredients
1 pound Red Potatoes
1/2 pound Green Beans
1 tablespoon Dijon Mustard
2 Cloves of Garlic
3 tablespoons Red Wine Vinegar
1/2 cup Olive Oil
3 tablespoons Fresh Parsley
1 teaspoon Sea Salt
1/2 teaspoon Black Pepper
2 (12oz) packs Albacore Tuna In Water
1/2 cup Pitted Kalamata Olives
6 Hard Boiled Eggs
Instructions
Bring potatoes to boil and cook until tender, about 12-15 minutes. (Do not overcook the potatoes will become too starchy). Rinse under cold water. Once cooled, cut into quarters.
Place green beans in a steaming pan, and steam until crisp-tender. (If you don’t have a steamer, microwave them in a bowl with about 1/4 cup of water for about 4 minutes.)
Whisk the garlic, mustard, vinegar, oil, parsley, salt, and pepper in a bowl. Add the tuna and stir, breaking up the tuna and combining the dressing.
Cut eggs into quarters.
Combine the potatoes, eggs, green beans, and olives and toss gently with the tuna dressing mixture. This can be served as prepared or refrigerated for about an hour to let the flavors combine.
